Mikkel Karstad has worked at some of the best restaurants in Europe from when he was only 16 years old. This includes Gordon Ramsay's Egg Aubergine in London and Kommandanten in Copenhagen. Mikkel's interest in food grew because of his grandmother. She also planted the idea of working with seasonal and nutritious ingredients in Mikkel's head, which he continues to do to this day. Today, Mikkel works as a food consultant and an author. Mikkel has published the books Cook: Natural Flavours from a Nordic Kitchen and Gone Fishing: From river to lake to coastline and ocean, 80 simple seafood recipes. He will be publishing another book in early 2018.
Mate Csatlos has worked as a bartender across all of Europe, and he uses his knowledge about different cultures and local ingredients in his work today. He built his career in London at The Dorchester Hotel. After this, he fell in love with Nordic cuisine and Noma. He moved to Copenhagen a couple of years ago, where he refines his personal style of bartending, which is characterized by sustainability and spiced up with a Nordic twist. Last year, Mate ended up in second place overall in the World Class Finals in Mexico City.
